Green raisins are softer and slightly juicier than darker, brown raisins. They are often used in Indian cuisine in sweet dishes such as rice pudding, and they go very well with cardamom and rose water. Try using them in savoury dishes too, scatter the green raisins over wilted greens with pine nuts, or mix through a pile of fluffy rice with herbs and spices.
